Cantuccini is one of the first sweet Bottle recipe. Cantuccini is an Italian biscuit best described as a crunchy golden almond cut. They are the perfect afternoon snack and may be dipped in coffee or traditionally in cold Vin Santo. Our Cantuccini has been given a twist with coconut flower sugar and dried lemon zest for extra flavor.

Empty the Bottle contents into a bowl and add ½ tsp. of baking powder and two eggs. Turn on the oven at 180°C. Knead the dough together and divide it into two equal sized pieces. Roll the pieces out to rods about 20cm long. Put the rods on baking paper, press them a little flat and bake in 20 min. Cut the cake on a chopping board with a sharp knife in oblique pieces about 2cm thick. The biscuits are set back on the baking tray with the cutting side facing up and dries in the oven about 5min at 100°C.
